This year has taken its toll on numerous people across the world, including many right here in Louisville. As we celebrate all that we are grateful for during the holiday season, we wanted to shine a light on some local non-profits that are giving back to our community and providing food and holiday meals for those in need. 

Wayside Christian Mission

Wayside Christian Mission provides meals to thousands of Louisville families each year through their free meals and mobile feeding van which brings the food directly to Louisville’s homeless population. During the holiday season, Wayside Christian Mission sets up Miracle on Broadway, a free Christmas store for the homeless and needy. The store provides food, toys, and personal items for approximately 5,000 families each year. 

 Jefferson County Society of Saint Vincent de Paul

This organization provides help to families or individuals who have fallen on hard times. Whether they provide food, shelter, or financial assistance, the Society of Saint Vincent de Paul’s mission is to stabilize the lives of people in need and to help them get back on their feet. During the holidays low income families, single mothers and others can qualify for assistance. They offer free food boxes, hot meals, Thanksgiving turkey dinners, children’s Christmas gifts, clothes, and more. 

Eastern Area Community Ministries 

Eastern Area Community Ministries are there to help when families are facing an emergency. They help by providing a number of different services including utility bill aid, free meals, one-on-one financial coaching, English lessons, and much more. In December, they set up a  store that parents can “shop” at for gifts, toys, and more. They also provide free holiday meals for those in need. 

Although it has been a tough year, there is also so much to be grateful for. Whether you donate to a food pantry, volunteer at a non-profit, or cook a meal for a family in need in your neighborhood, the holidays are a wonderful time to give back and help people who are less fortunate.

Roasted Chicken Provence

Instructions
 

  • Preheat oven to 425.
  • Mix butter, olive oil and salt into a paste and coat exposed areas of chicken.
  • Stuff chicken with lemon and herbs de Provence olive oils.
  • Roast at 425 for 25 minutes, reduce heat to 350 continue roasting until done, approximately 35 minutes per pound total cooking time.
  • Serve with the broth on the side as a sauce.
