Millionaires' Row Deviled Eggs

These aren't your grandmothers deviled eggs. With Kentucky's own Paddlefish Caviar and our flavor brightening Eureka Lemon Olive Oil, these are truly worthy of Millionaires Row.

Ingredients
  

  • 6 Hard Boiled Eggs hard boiled and peeled
  • 2 Tbsp Greek Yogurt we recommend 5%
  • 1 Tbsp Eureka Lemon Olive Oil
  • 2 tsp Dijon Mustard
  • 1 tin Kentucky's Own Paddlefish Caviar
  • 3 olives for garnish

Instructions
 

  • Prepare hard boiled eggs, boil, cool and peel.
  • Cut eggs in half and scoop yolks into your food processor.
  • Add greek yogurt, Eureka Lemon Olive Oil, mustard, and salt and pepper to taste. Go easy on the salt as the caviar will add a great deal of the salty kick.
  • Place yolk mixture into a piping bag. If you don't have a piping bag you can use a ziplock bag and cut a small hole in one end.
  • Pipe yolk mixture into egg white halves. Place in fridge covered with plastic wrap until ready to serve.
  • Before serving garnish with green olive halves and a spoonful of caviar.

Notes

We like to make these at least two hours ahead of time to let the flavors meld together. Kentucky became known for our Paddlefish Caviar in 2017/2018 and is now known the world over. Our new state slogan should be, Kentucky, more than horses and bourbon.
