Lemon Chicken Orzo Soup

Ingredients
  

  • 2 tbsp Primo's Milanese Gremolata Olive Oil
  • 1 cup orzo
  • 3 stalks celery
  • 3 carrots
  • 1/2 onion
  • 3 cloves minced garlic
  • 6 cup chicken broth
  • 1/4 tsp Italian seasoning
  • 1/2 lb chicken thighs
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • salt to taste
  • pepper to taste

Instructions
 

  • Sauté celery, carrots, and onions with Primo's Milanese Gremolata Olive Oil on medium-high heat for 5 minutes.
  • Stir in garlic and flour.
  • Add broth and stir until the flour dissolves.
  • Add Italian seasoning and chicken, then bring the soup to a boil.
  • Place lid over pot slightly ajar and simmer for 15 minutes.
  • Add orzo and stir to avoid sticking. Cook for 10 minutes.
  • Remove chicken to cut it into bite-size pieces, then add back into pot.
  • Add the lemon juice, parsley, salt, and pepper.
  • Serve and enjoy!
