
Lemon Chicken Orzo Soup
Warm your heart up with a delicious lemon chicken orzo soup
Equipment
- 1 large pot
Ingredients
- 2 tbsp
Primo's Milanese Gremolata Olive Oil - 1 cup orzo
- 3 stalks celery
- 3 carrots
- 1/2 onion
- 3 cloves minced garlic
- 6 cup chicken broth
- 1/4 tsp Italian seasoning
- 1/2 lb chicken thighs
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- salt to taste
- pepper to taste
Instructions
- Sauté celery, carrots, and onions with Primo's Milanese Gremolata Olive Oil on medium-high heat for 5 minutes.
- Stir in garlic and flour.
- Add broth and stir until the flour dissolves.
- Add Italian seasoning and chicken, then bring the soup to a boil.
- Place lid over pot slightly ajar and simmer for 15 minutes.
- Add orzo and stir to avoid sticking. Cook for 10 minutes.
- Remove chicken to cut it into bite-size pieces, then add back into pot.
- Add the lemon juice, parsley, salt, and pepper.
- Serve and enjoy!
