Caprese Bruschetta with Balsamic Glaze

Ingredients
  

  • 1 baguette, sliced into 1/2-inch thick rounds
  • 1 lb fresh mozzarella cheese, sliced
  • 2-3 large tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze
  • Extra virgin olive oil (Garlic EVOO & Herbs de Provence EVOO to finish)
  • 2 garlic cloves, peeled and halved
  • Salt and pepper to taste

Instructions
 

  • Make your balsamic glaze by selecting one of Primo's delicious Balsamic Vinegars we recommend trying our Lavender Balsamic Vinegar or Neapolitan Herb. Bring 1 cup of your choice of Balsamic Vinegar to a boil. Reduce heat to medium-low and simmer for 15 minutes or until balsamic vinegar coats the back of a spoon. Remove from heat and set aside to cool.
  • Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for 8-10 minutes, or until golden brown and crispy.
  • Rub each toasted baguette slice with the halved garlic cloves for a hint of garlic flavor.
  • Layer each baguette slice with a slice of fresh mozzarella cheese, followed by a slice of tomato.
