Balsamic Lamb Chops

Enjoy this delicious balsamic lamb chops recipe just in time for Easter! Your family will love it!

Ingredients
  

  • 1/4 cup Primo's Basil Olive Oil
  • 2 tbsp finely-chopped parsley
  • 1 tbsp finely-chopped rosemary
  • 1 tbsp finely-chopped garlic
  • 2 tbsp finely-chopped shallot
  • salt to taste
  • pepper to taste
  • 1 rack lamb (about 8 chops)
  • 1 cup Primo's 18-Year-Old Balsamic Condimento for the reduction
  • 1 tsp finely-chopped garlic for the reduction
  • 3 sprigs rosemary for the reduction & garnish

Instructions
 

  • Preheat oven to 390 degrees Fahrenheit.
  • Mix Primo's Basil Olive Oil with parsley, rosemary, garlic, and shallots in a bowl. Season with salt and pepper to taste.
  • Marinate rack of lamb with the mixture and let sit for 40 minutes.
  • Sear rack of lamb on both sides in a pan on high heat.
  • Once seared place on a baking tray and bake for 10 minutes. Let rest a few minutes before cutting.
  • For the reduction, heat Primo's 18-Year-Old Balsamic Condimento in a small pot. Add garlic and rosemary and cook until it reduces and has a thick consistency. Let cool.
  • Cut the rack of lamb into chops and ladle balsamic reduction on top. Garnish with rosemary and enjoy!
