Balsamic Veggie Stew

You and your family will love this yummy Balsamic Veggie Stew that's a super easy weeknight dinner!

Ingredients
  

  • 1 tbsp Primo's Baklouti Green Chili Olive Oil
  • 1 diced Yellow onion
  • 4 cloves Minced garlic
  • 6 tbsp Tomato paste
  • 2 cups Vegetable broth
  • 1 cup Water
  • 1 15oz can Diced tomatoes
  • 1 15oz can Crushed tomatoes
  • 2 tsp Oregano (dried)
  • 5 cups Chopped assorted vegetables We encourage you to use what's in season at your local farmers' markets, or your favorites!
  • 2 large Peeled and cubed sweet potatoes
  • 1/4 cup Primo's Neapolitan Herb Balsamic Vinegar
  • 1/3 cup Chopped fresh basil

Instructions
 

  • Heat Primo's Baklouti Green Chili Olive oil in on medium-high heat and sautee onion and garlic until softened.
  • Add tomato paste and cook 1 minute. Pour in: broth, diced tomatoes, crushed tomatoes, oregano, chopped vegetables, and sweet potatoes. Bring up to a boil, then cover and simmer for 30 minutes or until vegetables are tender.
  • Stir the Primo's Neapolitan Herb Balsamic Vinegar and chopped basil. Heat for about 10 minutes.
  • Serve & enjoy!
