Balsamic Bruschetta

Course Appetizer, Vegetables

Ingredients
  

  • 2 lb tomatoes Fresh from the farmers' market is best!
  • 1/2 tsp Seasonello Sardegna (Sardinia) Sea Salt
  • 1/2 cup Finely chopped white onion
  • 1/2 cup chopped fresh basil
  • 1 baguette
  • 2-3 tbsp Primo's Garlic Olive Oil *as desired for bread
  • 2 tbsp Primo's Garlic Olive Oil *for tomatoes
  • Primo's Neapolitan Herb Balsamic Vinegar

Instructions
 

  • Preheat oven to 450 degrees Fahrenheit & line a baking sheet with parchment paper.
  • Dice tomatoes, leaving the seeds and juice on the cutting board. Add the tomatoes (without the juice and seeds) into a mixing bowl. Add Seasonello Sardegna (Sardinia) Sea Salt to the tomatoes, then add onion and basil. Stir and set aside.
  • Slice baguette. Brush both sides of each slice with Primo's Garlic Olive Oil. (About 2-3 tbsp).
  • Place the slices on the baking sheet and bake for 6-9 minutes, until they’re crisp and golden on top. Transfer to a serving platter.
  • Drain excess tomato juice and add 2 tablespoons of Primo's Garlic Olive Oil. Stir and add any additional Seasonello Sardegna (Sardinia) Sea Salt to taste.
  • Add the tomato mixture to each slice of toast. Drizzle Primo's Neapolitan Herb Balsamic Vinegar over each slice. Serve and enjoy!
