Summertime is here! We are so grateful that this year we’ll be able to hang out with our friends and family all summer long. School’s out and it’s the season of days by the pool and barbecues in the backyard.
It’s a time for celebrating each other’s company. Nothing brings people together or adds to a party more than good food. We wanted to share with you three recipes that are sure to be crowd pleasers at your next gathering. Because we know time is precious, they each have varying lengths of prep time. You’ll be able to whip up something great whether you have 10 minutes to spare or 30 minutes for a culinary masterpiece.
If you need to pull together something quick, throw together this Mango Cucumber Salsa. You’ll just need to slice and dice. Cucumbers, mango, scallions, cilantro, and red bell pepper are combined with splashes of fresh orange juice, Primo Serrano Honey Vinegar, and Primo Persian Lime Olive Oil. This refreshing and zesty salsa is great as a dip for chips and crackers or as a topping on grilled chicken and salmon. Perfect for a summer barbecue!
This recipe is just as simple but requires some assembly so it takes a little more time. Strawberry Balsamic Bruschetta is easy to eat finger food bursting with the flavors of summer. Slice up a baguette and bake the slices until they’re just a little hardened. Then in a bowl, mix together some ricotta cheese, salt, pepper, and Primo Persian Lime Olive Oil which you’ll spread on top of your bread. Then finish it off with diced strawberries, basil, and a drizzle of Primo Strawberry Balsamic. Bon appetit!
Creamy Chicken Stuffed Mini Peppers with Spinach Walnut Pesto an appetizer that will really please a crowd. No one will be able to just eat one. For the stuffed mini peppers you will just need the mini peppers, as well as three kinds of cheese, cooked chicken breast, roasted red peppers, shallots, parsley, and salt & pepper. The Spinach Walnut Pesto which really ties the dish together needs walnuts, spinach, parsley, parmesan cheese, basil, garlic, lemon juice, and Primo Eureka Lemon Olive Oil. Make sure you get to try one before they’re gone!
