What are Dark Chocolate Balsamic Fudge Cookies?
Dark Chocolate Balsamic Fudge Cookies are a rich, brownie-textured cookie with a sophisticated twist: a splash of Primo’s Dark Chocolate Balsamic Vinegar deepens the cocoa and brightens every bite. The balsamic does what a pinch of salt does for chocolate, it makes the flavor rounder, a little tangy, and far more grown-up than your average fudge cookie. Tart dried cherries soaked in that same balsamic add pockets of chewy contrast. It’s an easy way to turn a classic homemade cookie into something you’d proudly set out at a dinner party.
While you may not typically reach for balsamic vinegar when you’re baking dessert, this is exactly the kind of unexpected pairing Primo’s Dark Chocolate Balsamic Vinegar was made for.
Ingredients for Dark Chocolate Balsamic Fudge Cookies
Primo’s Dark Chocolate Balsamic Vinegar
The star of the show. It plays two roles here: soaking the dried cherries so they plump up with flavor, and going straight into the batter to intensify the chocolate. A good dark chocolate balsamic like Primo’s is thick, a little syrupy, and slightly sweet, so a few tablespoons go a long way.
Dried Cherries
Dried cherries bring tart, chewy bursts that cut through the fudgy richness. Coarsely chop them so the pieces distribute evenly. Dried cranberries or chopped dried tart cherries work as substitutes if that’s what you have on hand.
All-Purpose Flour
Just enough flour to hold these together while keeping them dense and fudgy rather than cakey. Measure by spooning and leveling so you don’t pack in too much.
Cocoa Powder
Unsweetened cocoa powder gives these cookies their deep chocolate backbone. A good-quality cocoa really shows here, since chocolate is the main flavor.
Butter
Room-temperature butter, melted, is what gives the cookies their soft, fudgy crumb. Let it come to room temperature first so it melts evenly.
Sugars
A mix of white and brown sugar. The white sugar sweetens and crisps the edges, while the brown sugar adds moisture and a subtle molasses note that plays beautifully with the balsamic.
Greek Yogurt
Plain Greek or non-fat yogurt keeps these cookies tender and moist without extra oil, and adds just a hint of tang that echoes the balsamic.
Vanilla, Baking Soda & Salt
The supporting cast. Vanilla rounds out the chocolate, baking soda gives a gentle lift, and a little salt sharpens all the flavors.
How to Make Dark Chocolate Balsamic Fudge Cookies
The trick to these cookies is soaking the cherries in the balsamic first, that quick step in the microwave lets them drink up the flavor so every bite has those tangy-sweet pockets. From there it comes together like a brownie batter: melt the butter, blend in the cocoa and sugars, then fold in the rest. Don’t overbake them! Pull them when the edges are just set and the centers still look a touch soft. They firm up as they cool, and that’s what keeps them fudgy.
Dark Chocolate Balsamic Fudge Cookie Variations
Make these your own. A handful of dark chocolate chunks folded into the batter doubles down on the chocolate. Swap the dried cherries for dried cranberries or chopped dried figs for a different fruity note. A flaky sea-salt finish on top before baking makes the chocolate and balsamic pop even more. For a nutty version, add chopped toasted hazelnuts or walnuts.
How to Serve Dark Chocolate Balsamic Fudge Cookies
Serve these slightly warm for maximum fudginess, or at room temperature with coffee or a glass of port. They’re elegant enough for a dessert board alongside fresh berries, and always a hit at gatherings where you want something that looks a little more special than the usual chocolate cookie.
How to Store Leftovers
Store cooled cookies in an airtight container at room temperature for up to 4 days. They also freeze well, layer them between parchment in a freezer-safe container for up to 2 months and thaw at room temperature.
