
Balsamic Veggie Stew
You and your family will love this yummy Balsamic Veggie Stew that's a super easy weeknight dinner!
Ingredients
- 1 tbsp Primo's Baklouti Green Chili Olive Oil
- 1 diced Yellow onion
- 4 cloves Minced garlic
- 6 tbsp Tomato paste
- 2 cups Vegetable broth
- 1 cup Water
- 1 15oz can Diced tomatoes
- 1 15oz can Crushed tomatoes
- 2 tsp Oregano (dried)
- 5 cups Chopped assorted vegetables We encourage you to use what's in season at your local farmers' markets, or your favorites!
- 2 large Peeled and cubed sweet potatoes
- 1/4 cup Primo's Neapolitan Herb Balsamic Vinegar
- 1/3 cup Chopped fresh basil
Instructions
- Heat Primo's Baklouti Green Chili Olive oil in on medium-high heat and sautee onion and garlic until softened.
- Add tomato paste and cook 1 minute. Pour in: broth, diced tomatoes, crushed tomatoes, oregano, chopped vegetables, and sweet potatoes. Bring up to a boil, then cover and simmer for 30 minutes or until vegetables are tender.
- Stir the Primo's Neapolitan Herb Balsamic Vinegar and chopped basil. Heat for about 10 minutes.
- Serve & enjoy!
