Bourbon Bacon Jam

Add a kick of savory jam to elevate any meal

Ingredients
  

  • 3/4 lb bacon cut into inch slices, then cut in half
  • 1 large minced shallot
  • 2 cloves minced garlic
  • 1/2 cup light brown sugar
  • 1/4 cup Primo's Sherry Vinegar
  • 1/4 cup water
  • 1/4 cup maple syrup
  • 1/4 cup bourbon of your choice
  • 1 tsp mustard
  • 1 dash salt

Instructions
 

  • Cook bacon in a pan until done. Transfer to a paper towel-lined plate, reserving 1 tbsp of bacon grease in the pan. Discard the rest.
  • Add garlic and shallot to the same skillet with that reserved bacon fat. Cook for 5 minutes.
  • Add the remaining ingredients and stir. Simmer on low for 10-15 minutes, stirring occasionally until it starts to thicken into a jam.
  • As the liquid evaporates, add the bacon. Stirr off heat and let cool.
  • Serve however you'd like and enjoy!
