Peaches are finally in season! 🍑 They’re one of our go-to summer fruits when we’re browsing around farmers’ markets. Great just by itself, but even better on the grill or sliced into a salad.
If you’re a fan of the sweeter and fruity salads that don’t really seem like they qualify as salads, try this Peach Caprese Salad recipe. It’s one I make every summer because it’s super easy and absolutely delicious. And hey, who wants to sweat over a hot stove in the heat of summer, anyway?
This recipe features:
- Primo’s Madagascar Black Pepper Olive Oil ~ You can also try it with Primo’s Basil Olive Oil if you don’t have any fresh basil on hand!
- Primo’s 18-Year-Old Balsamic Condimento ~ You can also try it with Primo’s Neapolitan Herb Balsamic Vinegar.
Peach Caprese Salad
Ingredients
- 1 sliced yellow peach
- 1 sliced heirloom tomato
- sliced mozzarella *to taste
- Primo's Madagascar Black Pepper Olive Oil *OR sub with Primo's Basil Olive Oil if you don't have any fresh basil!
- Primo's 18-Year-Old Balsamic Condimento *OR try it with Primo's Neapolitan Herb Balsamic Vinegar
- fresh basil leaves *to taste
Instructions
- Slice your peach, tomato, mozzarella, and fresh basil leaves, then add everything into a bowl.
- Drizzle your choice of Primo's Olive Oil and Primo's Balsamic Vinegar into the bowl.
- Mix, and enjoy!
This is the recipe I use for my summer salad lunches, but you can double or triple it when you’ve got loved ones coming over.
