Ingredients
- 6 Hard Boiled Eggs hard boiled and peeled
- 2 Tbsp Greek Yogurt we recommend 5%
- 1 Tbsp Eureka Lemon Olive Oil
- 2 tsp Dijon Mustard
- 1 tin Kentucky's Own Paddlefish Caviar
- 3 olives for garnish
Instructions
- Prepare hard boiled eggs, boil, cool and peel.
- Cut eggs in half and scoop yolks into your food processor.
- Add greek yogurt, Eureka Lemon Olive Oil, mustard, and salt and pepper to taste. Go easy on the salt as the caviar will add a great deal of the salty kick.
- Place yolk mixture into a piping bag. If you don't have a piping bag you can use a ziplock bag and cut a small hole in one end.
- Pipe yolk mixture into egg white halves. Place in fridge covered with plastic wrap until ready to serve.
- Before serving garnish with green olive halves and a spoonful of caviar.
