Sourced from harvest olives grown in Spain, this oil was crushed in November 2025 at peak freshness. 

The first thing you’ll notice in our Manzanillo is a creamy almond center that coats the palate beautifully. From there, bitter and sweet greens come through on the finish, adding structure without being overwhelming. 

At 664 ppm of biophenols, it’s packed with the kind of natural antioxidants that make extra virgin olive oil so good for you.

Polyphenols are linked to reduced inflammation and oxidative stress, making this oil as good for your body as it is for your palate.

Its high fruitiness score (5.0) means the olive flavor is front and center, while the moderate bitterness keeps things interesting without being aggressive. Pair it with a fruity white balsamic for a lighter contrast, or with an aged dark balsamic for something richer.
