Mediterranean Grilled Balsamic Glazed Chicken Salad

Ingredients
  

For the Balsamic Glazed Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • Salt and pepper to taste

For the Salad:

  • Mixed salad greens (lettuce, arugula, spinach)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Kalamata olives
  • Feta cheese, crumbled

Instructions
 

  • In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey, salt, and pepper to create the marinade for the chicken.
  • Place the chicken breasts in a shallow dish or resealable plastic bag, and pour the marinade over them. Ensure the chicken is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  • Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
  • Grill the chicken breasts for about 6-8 minutes per side, or until they are cooked through and have grill marks. Baste the chicken with any remaining marinade during grilling for extra flavor.
  • Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it thinly.
  • While the chicken is resting, prepare the salad. In a large bowl, toss together the mixed salad greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
  • Arrange the sliced grilled balsamic glazed chicken on top of the salad.
