Balsamic Caramelized Onion Grilled Cheese

- 1 skinned, halved, and sliced yellow onion
- 3 tbsp unsalted butter
- 1 tbsp Primo's Cayenne Chili Olive OIl
- 2 tbsp Primo's Tarragon White Balsamic Vinegar
- 1 pinch salt
- 1 pinch pepper
- 1 tbsp fresh, chopped basil
- 2 cup shredded fontina cheese
- 4 slices bread
- 3-4 tbsp unsalted butter for the bread
Add butter and Primo's Cayenne Chili Olive Oil to a pan and heat on medium/high until butter melts. Add onions. Stir and cook until translucent and slightly browned.
Add Primo's Tarragon White Balsamic Vinegar, salt, and pepper. Cook until caramelized. Once caramelized, add chopped basil and turn off heat. Set aside.
Warm a different large skillet or griddle on medium heat. Butter one side of each slice of bread. Place each slice (butter-side down) on the pan.
Add half a cup of shredded cheese to each slice. Place half the caramelized onions on 2 slices of bread.
After 3-4 minutes, flip the cheese-only slices over to the cheese-and-onion slices. Cook for 1-2 minutes or until golden brown.
Let sit for a minute or two before cutting and serving. Enjoy!
